A while ago, gwen and I chatted about a dish of fried bananas that my former Filipina friend made for me in the late 1960's.
Gwen isn't familar with that dish but I keep insisting that she make it for me, or at least try.

Here's one way of cooking BANANA FRITTERS
Ingredients:
100 grams glutinous rice flour
2/3 cup disiccated coconut
50 grams sugar
1 tablespoon sesame seeds
3/4 cup coconut milk
2/3 cup water
6 pieces latundan banana, sliced in quarters
oil (Canola or Vegetable), for deep frying
vanilla ice cream, for accompaniment
Directions:
1. Place the flour, coconut, sugar, sesame seeds,
coconut milk and water in a bowl and whisk with
a wire whip to smoothen the batter. Add more
water if the batter is too thick. Set aside to rest for
an hour.
2. Peel the bananas and cut in half lengthwise
then in half again crosswise., coming up with a
total of 4 slices per banana.
3. Fill a wok or deep heavy-based saucepan 1/3
full of oil and heat to 350 F.
4. When oil is ready, dip banana into the batter
then drop gently into the hot oil. Cook in batches
for 4-6 minutes or until golden brown all over.
Remove with a slotted spoon and drain on paper
towels.
5. Serve hot with vanilla ice cream.

DK Gwen Bren and Kay thanks for the safe wishes I get a bit jumpy during tornado warnings (like you couldn't tell ). The one that hit my house years back scared me to death. It slammed into the house at about 3:20 in the morning. Then your ears pop from the pressure and it feels like the roof is coming off. Then it slams the house again and is gone all in about 4 seconds. Terrifying and makes you feel so helpless. Daylight you see the destruction left behind. Telephone poles snapped like tooth picks. Roofs gone huge trees down.

Linda I'm so glad you're ok! We also had a F1 tornado hit our house in 1999 broken windows, and damaged windows are all we had too, however ever since then I've been terrified of storms.

Caroline, yes that IS my Taylor in the picture, she is doing ok...she has a tiny setback, needed to go back in for a few more rounds of chemo, she has 3 more left after this morning, so to show our support for her the entire family is using her picture today on all our sites, BUT she is doing great, she is getting fitted for her new leg and she has a great outlook on life. About the boys who did that to her, she said the other day "Pfft I can't be worrying bout them I have more important things to worry bout...like Halloween" she is still deciding on what she wants to be, it's down to either Snow white or Frankenstein...Thanks for asking about her!
ps.. I actually had to download "Sweet Caroline" listen to it all the time now.
